Freeze Green Peanuts
Green peanuts are, according to the Lee Bros. Boiled Peanuts Catalog, peanuts that have not been dried, cooked or altered in any way. They are freshly harvested straight out of the ground and moist. Green peanuts are a passion among connoisseurs of that traditional southern favorite--boiled peanuts. Authentic green peanuts are available for only a few weeks during the seasonal peanut harvest, and they spoil quickly. To keep them fresh and at-the-ready year-round, you can simply freeze them.
Instructions
1. Line 1 or 2 cookie sheets with paper towels. Set aside.
2. Place green peanuts in a large colander.
3. Wash the peanuts thoroughly with tepid water. If the peanut shells are especially dirty, you may use a mild liquid dish washing liquid, but make sure you rinse thoroughly.
4. Fill a large pot two-thirds full with water. Bring water to a boil.
5. Empty the colander of peanuts into the boiling water. Boil for exactly 10 minutes.
6. Remove immediately from heat and pour the peanuts and water back into the colander. Allow the water to drain completely.
7. Spread the peanuts out over the paper towel-lined cookie sheets. Allow the peanuts to cool completely.
8. Place the cooled peanuts into airtight, moisture-proof freezer containers. Seal the containers carefully and properly.
9. Store the peanuts in your freezer at no higher than 0 degrees Fahrenheit. Stored and frozen properly, green peanuts will keep indefinitely.
Tips Warnings
Defrost green peanuts and use them to make southern boiled peanuts, peanut butter or peanut butter chocolates.
Discard peanuts if they are slimy, moldy, taste rancid or smell foul.
